I have been promising all week to start sharing some of the recipes from my 33 day menu. Sorry it has taken so long. I won’t promise when the next recipe will post, due to life keep getting in the way, but I do promise it will be this week.
Lemon and Garlic Chicken
1 whole chicken (watch for sales, buy 2, one for later use)
1/2 lb of baby carrots is enough for my family of 2
3 Medium potatoes, peeled and cubed
1 large onion, sliced, chopped is not necessary
2 small lemons, quartered
1 tsp of minced garlic
seasoning, i.e. season salt, onion powder, pepper, what ever your hearts desire
1 tablespoon of plain old flour
1 Large reynold’s baking bag (the see thru kind)
Put the flour into your bag and shake to coat the bag. Remove the innards from the chicken and discard.
On a clean plate, season your chicken. with your favorite seasoning.
Place the chicken into the bag when you are done.
Arrange potatoes and carrots around the chicken, evenly.
Put the onion slices on the top of the vegetables and inside the chicken.
Sprinkle the minced garlic the best you can on top of veggies and the chicken.
Squeeze the lemons on top of the chicken, on top of veggies, then lay the lemons on top of veggies or in the chicken.
Close the bag according to the directions, pop into a preheated oven @425 for an hour.
Open with caution as the bag is hot, enjoy.
